Artisan Bread in Five Minutes

BREAD - Simple, Fast and Yummy!
*This comes to us from Gail Brill of the ADK Green Committee in Saranac Lake during a talk she gave for our first Local Earth Week Celebration.

INGREDIENTS
3 Cups Warm
1.5 Table Spoons Yeast
1.5 Table Spoons Salt
6.5 Cups All Purpose Flour

DIRECTIONS
1. Mix ingredients in a bowl and cover (The dough will double in size - you do not want the cover to be touching the dough after it expands)
2. Let it rise for 2 hours
3. Preheat oven to 450 degrees. *Place a pizza stone or cast iron pan in the oven on an upper rack and place an empty boiler pan on the bottom rack at this time.
4. Pull off a grapefruit size piece of bread and refrigerate the rest for later use (it will last for 2 weeks) Sprinkle the dough with flour so it does not stick to you.
5. Form into a loaf or any other shape you desire, put it on parchment paper and let it rise.
6. After the oven has preheated and the dough has risen, put some water in the boiler pan and then add the bread to the stone or iron skillet.
7. Bake for about 25 minutes. Check to see it is golden brown.

**For other types of bread replace one cup of the flour with another kind. (rye, whole wheat, etc.)

Why Eat Locally?
Our food now travels an average of 1,500 miles before ending up on our plates. This globalization of the food supply has serious consequences for the environment, our health, our communities and our tastebuds. Much of the food grown in the breadbasket surrounding us must be shipped across the country to distribution centers before it makes its way back to our supermarket shelves. Because uncounted costs of this long distance journey (air pollution and global warming, the ecological costs of large scale monoculture, the loss of family farms and local community dollars) are not paid for at the checkout counter, many of us do not think about them at all.

What is eaten by the great majority of North Americans comes from a global everywhere, yet from nowhere that we know in particular. How many of our children even know what a chicken eats or how an onion grows? The distance from which our food comes represents our separation from the knowledge of how and by whom what we consume is produced, processed, and transported. And yet, the quality of a food is derived not merely from its genes and the greens that fed it, but from how it is prepared and cared for all the way until it reaches our mouths. If the production, processing, and transport of what we eat is destructive of the land and of human community -- as it very often is -- how can we understand the implications of our own participation in the global food system when those processes are located elsewhere and so are obscured from us? How can we act responsibly and effectively for change if we do not understand how the food system works and our own role within it?

Can we stay within a 100 mile radius? While corporations, which are the principal beneficiaries of a global food system now dominate the production, processing, distribution, and consumption of food, alternatives are emerging which together could form the basis for foodshed development. Just as many farmers are recognizing the social and environmental advantages to sustainable agriculture, so are many consumers coming to appreciate the benefits of fresh and sustainably produced food. Such producers and consumers are being linked through such innovative arrangements as community supported agriculture and farmers' markets. Alternative producers, alternative consumers, and alternative small entrepreneurs are rediscovering community and finding common ground.

In the greater bioregion of the Bay Area, one can eat like royalty, every day of the year, on locally grown and produced food. From West Marin come oysters, mussels, grass-fed beef, cheese, and milk. From the waters of the Pacific come seasonal fish like salmon, ling cod, and crab, while the estuaries give us halibut, sturgeon, and bass. Sonoma County is the home of sustainable chickens, spring lamb, of dozens of small farms producing fruits, vegetables, wild mushrooms and wines. Napa also gives us wines, as well as many fruits and vegetables. Contra Costa, Alameda, Solano, San Mateo, all of these Bay Area counties are home to some of the finest food grown or produced anywhere in the world.

Recognition of one's residence within a foodshed can confer a sense of connection and responsibility to a particular locality. The foodshed can provide a place for us to ground ourselves in the biological and social realities of living on the land and from the land in a place that we can call home, a place to which we are or can become native.

We invite all local eaters (this means you) to join us in a celebration of our local food cornucopia and in an effort to raise our own awareness of our place within the foodshed. Our goal is to eat from within a 100 mile radius of San Francisco of our homes. Failing that, we will attempt to eat foods that come from within our State, or are purchased directly from small scale farmers elsewhere in the world. Some of us will interpret these guidelines more strictly than others, but the main goal is to pay attention to where the food that we eat comes from.

'Our farm is located in the northern most Adirondack Mountains of New York State, about twenty miles south of the Canadian Border. We currently own approximately four hundred and fifty acres of crop land, pasture and balsam fir woodland which has been managed with natural, organic farming principles since 1980.

The deer we raise are Fallow Deer, which are native to the European Continent. We chose Fallow Deer because they are universally accepted as the premium venison animal by chefs throughout the world. European chefs consider Fallow Deer venison to be a premiere product due to its unique flavor & tenderness.

Why do we farm organically? Very simply, because we live on the land we farm. Our four children catch fish and swim in our stream and pond and frequently play in the fields. Our drinking water comes from a well located directly in the center of our farm and we pick and eat wild berries and home grown vegetables routinely. Last but not least, we eat our own venison in every shape and form. When we first started farming almost twenty years ago, we came to the conclusion that we did not want to utilize all of the chemicals of conventional agriculture which are known to be hazardous, even if they would increase production and lessen the workload.

Our venison is processed and packaged under USDA inspection just like the meat you buy in your grocery store or specialty meat shop. One of the techniques which helps make our venison uniquely flavorful and unusually tender is dry aging. However, there is no better way to add flavor and tenderness to our meat, so we feel it is well worth the expense. Dry aging means our venison is hung in very specific temperature and humidity for 21-30 days before being cut into the various cuts. After aging, our venison is hand cut to our specifications and vacuum-packed. All of our Venison is then frozen and ready for shipping."

"The Champlain Valley Foodshed Coalition Winter Series is a monthly gathering of folks who want to eat well, live well, and have a positive impact on the environment. We are trying to foster connections that will strengthen our local food system, providing great food for people and livelihoods for farmers."

The purpose of the coalition is to bring food consumers and food producers together to promote awareness about sustainable farming and food issues and learn more about the issues related to sustainable food production and healthy eating. The coalition seeks to accomplish this by holding open meetings where people can gather to talk in an atmosphere that is open to both questions and contributions. These meetings occur during the late fall, winter, and early spring. There is no limit as to the type of sustainable farm, gardening, or food-related issue that can be brought to the table.

Sometimes the meetings are led by experts or professionals in their field, and sometimes they are led by neighborhood farmers or gardeners. The public is always invited and encouraged to attend. Membership in the Foodshed is through the Grange."
